This vegan Plumcot Cobbler was something he whipped up in Mildura. For those who don't know a plumcot, it's a mix between a plum and an apricot. An amazing and delicious little fruit.
p.s. You can use plums, nectarines, peaches or apricots if you can't find plumcots!
Ingredients
6 Plumcots
1 Cup Plain flour
1/2 Cup Brown Sugar + extra to sprinkle on top
3/4 Cup Almond Milk
1 Tbsp Baking Powder
3/4 Cup Vegan Butter
1/2 tsp Nutmeg
2 tsp Cinnamon
1/2 tsp Ground Cloves
Directions
Pre-heat your oven to 180 degrees C.
Start by melting the vegan butter until you get some bubbles in the liquid.
Pour into a shallow pie dish.
Mix all your dry ingredients together and then add the almond milk.
Mix together until well combined.
Pour the batter into the pie dish and let the butter naturally run over the batter, don't mix together.
Slice up your plumcots into eights and place on the top of your dish.
Sprinkle brown sugar over the top.
Place in the oven and cook for 45 mins.
Take out and party, maybe wait a bit to cool, but then party.
